Organic acids
INTRODUCTION
The identification and quantitative analysis of major organic acids in fruits and vegetables is considered very important for the food and beverage industry. Organic acids play a significant role thanks to their influence on flavour, stability and keeping quality. Organic acids are generated during the aerobic oxidation of carbohydrates, proteins and fats in most biological systems.
ABSTRACT
Determination of nine organic acids – oxalic (CAS 144-62-7), tartaric (CAS 87-69-4), formic (CAS 64-18-6), malic (CAS 617-48-1), acetic (CAS 64-19-7), maleic (CAS 110-16-7), citric (CAS 77-92-9), fumaric (CAS 110-17-8) and succinic acid (CAS 110-15-6) – on an ARION® Polar C18, 5 µm column (250 mm × 4.6 mm, ARI-5721-LM46). Isocratic elution with 20 mM NaH2PO4, pH 2.7 at 0.5 ml/min and 30 °C, UV detection at 209 nm. The standard covers concentrations from 0.004 mg/l (fumaric acid) to 0.729 mg/l (succinic acid); all nine acids are resolved within about 20 minutes.
