Organic acids
INTRODUCTION
This application shows the determination of tartaric, malic, shikimic, lactic, citric and succinic acids. The quantity balance of these compounds influences on taste and flavor of wines and fruit juices. The ASTRA® column provides the simultaneous determination of organic acids with good peaks resolution at low limits of the concentrations.
ABSTRACT
Isocratic HPLC/DAD determination of six organic acids – tartaric (CAS 87-69-4), malic (CAS 6915-15-7), shikimic (CAS 138-59-0), lactic (CAS 50-21-5), citric (CAS 77-92-9) and succinic acid (CAS 110-15-6) – whose balance influences the taste and flavour of wines and fruit juices, on an ASTRA® C18-AQ, 3.0 µm column (150 mm × 4.6 mm, AST-5832-IK46). Isocratic elution with 25 mM KH2PO4 (pH 2.71) at 1.0 ml/min and 30 °C, injection volume 10 µl, DAD detection at 204 nm. All six acids are resolved within about 12 minutes.
