Sugars in honey
INTRODUCTION
Honey has been used since ancient times as a food and in medicine. Its composition is highly variable depending on its botanical and geographical origin. It is mainly composed of a mixture of different sugars, which daily intake should be controlled due to the nutritional reasons. In this application the chromatographic profiles of sugars in several honey varieties are shown.
ABSTRACT
HPLC-RID determination of sugars in several honey varieties on an ASTRA® Sugar Ca(S) 10 µm column, 300 mm × 8 mm, part number AST-5906-VN80. Mobile phase 100% H2O, flow rate 1.0 mL/min, column temperature 80 °C, injection volume 3 µL, refractive index detection at 55 °C. Analytes: 1. glucose, CAS number 2280-44-6, and 2. fructose, CAS number 57-48-7. The note shows six chromatographic profiles recorded on the column referred to in the captions as ASTRA® Sugar Ca: honeydew honey, forest honey, linden honey, meadow honey, desert false indigo honey and goldenrod honey. In every profile glucose (peak 1) elutes at about 7 min and fructose (peak 2) at about 8.4 min, fructose being the larger peak in all six varieties; the profiles differ mainly in peak height, with goldenrod honey…
